Looking for easy-peasy recipes to shake things up a little for your next camping trip? Try out these tried, tested, and true dishes that will make everyone in your crew happy and full. These can all be easily made in an RV kitchenette, on a camp stove, or over the campfire.
Campfire Breakfast Burritos
Ingredients:
- 1 tablespoon olive oil
- 1 onion, chopped
- 1 red bell pepper, chopped
- 1 green bell pepper, chopped
- 1 cup mushrooms, sliced
- 1 cup black beans, rinsed and drained
- 1 cup cooked rice
- 1 teaspoon chili powder
- 1 teaspoon ground cumin
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 8 large eggs
- 1/2 cup milk
- 1/2 cup shredded cheese
- 8 large flour tortillas
- Salsa, for serving
Instructions:
- Heat the oil in a large skillet over medium heat. Add the onion, bell peppers, and mushrooms, and cook until softened, about 5 minutes.
- Stir in the black beans, rice, chili powder, cumin, oregano, salt, and black pepper. Cook for 2 minutes, or until heated through.
- In a large bowl, whisk together the eggs and milk. Stir in the cheese.
- Pour the egg mixture into the skillet with the vegetables and cook, stirring frequently, until the eggs are cooked through, about 5 minutes.
- Warm the tortillas over the fire or in a dry skillet.
- To assemble the burritos, spoon about 1/2 cup of the egg mixture onto each tortilla. Top with salsa, if desired. Roll up the burritos and serve immediately.
Campfire Pancakes
Ingredients:
- 1 cup all-purpose flour
- 2 tablespoons sugar
- 2 teaspoons baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 1 egg
- 1 cup milk
- 1/4 cup melted butter or vegetable oil
- Butter or cooking spray, for greasing the skillet
- Maple syrup, for serving
Instructions:
- In a large bowl, whisk together the flour, sugar, baking powder, baking soda, and salt.
- In a separate bowl, whisk together the egg, milk, and melted butter or oil.
- Add the wet ingredients to the dry ingredients and whisk until just combined. Do not overmix.
- Heat a greased skillet over medium heat.
- Pour 1/4 cup of batter onto the hot skillet for each pancake. Cook for 2-3 minutes per side, or until golden brown.
- Serve immediately with butter and maple syrup.
Campfire Grilled Cheese Sandwiches
Ingredients:
- 1 loaf (1 pound) French bread
- 1 cup (4 ounces) shredded Cheddar cheese
- 1/2 cup (2 ounces) shredded Swiss cheese
- 1/2 cup (2 ounces) shredded Monterey Jack cheese
- 1/2 cup butter, softened
Instructions:
- Cut the bread into 1-inch slices.
- Combine the Cheddar, Swiss, and Monterey Jack cheeses in a bowl.
- Spread the butter on one side of each slice of bread.
- Place the bread slices, butter-side down, on a clean surface.
- Sprinkle the cheese mixture evenly over the bread slices.
- Top with the remaining bread slices, butter-side up.
- Carefully wrap each sandwich in aluminum foil.
- Place the sandwiches on a grill over a medium-hot flame.
- Grill for 10-15 minutes per side, or until the cheese is melted and the bread is golden brown.
- Remove from the grill and let cool for 5 minutes before serving.
Campfire Pizza
Ingredients:
- 1 loaf (1 pound) Italian bread
- 1 cup (8 ounces) shredded mozzarella cheese
- 1/2 cup (4 ounces) shredded Parmesan cheese
- 1/2 cup (4 ounces) pepperoni slices
- 1/2 cup (4 ounces) cooked Italian sausage, crumbled
- 1/2 cup (4 ounces) sliced mushrooms
- 1/2 cup (4 ounces) chopped green bell peppers
- 1/2 cup (4 ounces) chopped red onion
- 1 cup (8 ounces) pizza sauce
Instructions:
- Cut the bread in half lengthwise.
- Spread the pizza sauce on the cut sides of the bread.
- Top with the mozzarella cheese, Parmesan cheese, pepperoni, sausage, mushrooms, green bell peppers, and red onion.
- Carefully wrap the pizza in aluminum foil.
- Place the pizza on a grill over a medium-hot flame.
- Grill for 10-15 minutes per side, or until the cheese is melted and the bread is golden brown.
